Recipe: Coconut Buckwheat Pancakes, with Pineapple, Crushed Mint and Coconut Yogurt

What better excuse could there be for cooking up a storm than Pancake Day? We're ready, with spatula's in-hand, for the 13th February to arrive.

We've teamed up with vegan blogger Petite Elise to bring you two irresistible recipes inspired by your favourite Tropic products. Recipe one has landed, and it's paying homage to our bestselling Wild Mint, Lime and Pineapple Body Wash. So, what are you waiting for? Read on for the recipe.

Coconut Buckwheat Pancakes with Pineapple, Crushed Mint and Coconut Yogurt.

Ingredients you will need:

  • 1 banana
  • 3/4 cup of buckwheat flour
  • 1/4 cup desiccated coconut
  • 1 cup of plant-based milk
  • 2 tbsp coconut yogurt
  • 1 tsp baking powder

Toppings:

  • Coconut yogurt
  • Pineapple
  • Fresh mint leaves
  • Lime
  • Agave syrup
  • Desiccated coconut
  • Black sesame seeds

 

Method:

  • Add all the pancake ingredients into a blender and whiz into a thick pouring consistency.
  • Heat up a large pan and pour the batter into round pancakes
  • Allow them to form bubbles on top before flipping over and cooking for a further few minutes.
  • Whilst they’re cooking, muddle some mint with agave syrup and lime. Drizzle on your chopped pineapple.
  • Stack the pancakes and top with coconut yogurt, the minty pineapple, desiccated coconut, and sprinkle on black sesame seeds and some more lime for a super tropical stack!
